Il Dogliani è un rosso piemontese che racconta l’evoluzione nel tempo di un varietale autoctono della regione, il Dolcetto. Si tratta infatti di un’uva tipica delle tradizioni enologiche contadine, che durante gli ultimi anni è stata nobilitata particolarmente soprattutto nella zona di Dogliani, che, dal 2011, è diventata addirittura oggetto di un passaggio da DOC a DOCG. Dopo 4-5 giorni si procede alla svinatura, e si completa la malolattica. L’affinamento finale si svolge in vasche d’acciaio, dove il vino rimane sino alla primavera successiva alla vendemmia.
